Reheating food destroys the chemical structure of nutrients and vitamins. In fact, cooked vegetables lose more than half of their vitamin C when reheated after 2-3 days in the refrigerator. When you microwave food, the mineral of the food is not affected, but when you reheat the food its vitamin gets down. However, microwave ovens aren’t a well-known villain.  If you don’t think you’ll be able to eat leftovers within 4 days, freeze them immediately.

Even if you buy fresh, locally grown produce, storing it in the refrigerator will change its nutritional value. Fruits and vegetables begin to lose some of the vitamins when you refrigerate them. Refrigeration slows the spoilage of produce such as berries, spinach, and potatoes. However, after a day, leafy vegetables like spinach lose essential nutrients like folic acid and vitamin C. For best results, keep the refrigerator below 40 degrees Fahrenheit.

Does Cutting and Storing Vegetables Lose Nutrients?

However, the amount of loss depends on the storage temperature and length. The amount of time food remains exposed to air.
